- 12 ounces cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup pepperoncini, sliced

- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
Instructions
- Cook the cheese tortellini according to package instructions. Drain and let cool.
- Combine the cooked tortellini, cherry tomatoes, cucumber, black olives, pepperoncini, and red onion in a large bowl.
- Whisk together the Italian dressing, dried oregano, salt, and pepper in a separate bowl.
- Pour the dressing over the salad and toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving. Enjoy!

Allowing the salad to chill enhances the flavors. For added protein, consider using quinoa or grilled chicken.
