Ingredients

  • 2 cups Grated zucchini
  • 1 cup Shredded cheddar cheese
  • 1 cup All-purpose flour
  • 1 cup Whole wheat flour
  • 1/2 cup Sugar
  • 1 tablespoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 2 Large eggs
  • 1/2 cup Vegetable oil
  • 1 teaspoon Vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the grated zucchini, cheddar cheese, eggs, oil, and vanilla extract until well combined.
  3. Whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, baking soda, and salt until evenly mixed.
  4. Add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Don’t overmix the batter to keep the bread tender. For added moisture, you can use Greek yogurt instead of vegetable oil.
