- 2 tablespoons chopped olive oil
- ½ cup chopped almonds
- 1 bunch fresh bok choy
- 1 clove minced garlic
- 1 tablespoon grated fresh ginger
- 2 tablespoons water
- 2 tablespoons dark soy sauce
- Fresh ground pepper to taste
- 2 tablespoons hoisin sauce
Instructions
- Begin by cutting off the bottom of the bok choy and slicing it lengthwise down the middle. Cut the stems into 1-inch wide strips for even cooking.
- In a wok or large skillet, heat the olive oil over medium heat and add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant, being careful not to let them burn.
- Add the bok choy to the wok and increase the heat to high. Quickly sauté the greens for approximately 3 minutes, allowing them to wilt slightly while retaining their color.
- Pour in the water and allow the bok choy to steam for another 4 to 5 minutes, stirring occasionally until they are tender but still vibrant.
- Season the dish with dark soy sauce, hoisin sauce, chopped almonds, and freshly ground pepper, giving everything a final stir to ensure even coating and flavor.
Notes
Use high heat to maintain color and crunch. Substitute sesame oil for olive oil for extra flavor.
