Instant Pot Whole Chicken and Potatoes Recipe

Equipment

Ingredients
  

  • 4 lb Whole chicken
  • 4 large Potatoes

For seasoning

  • 1 tbsp Olive oil
  • 2 tbsp Italian seasoning
  • 2 tbsp Onion powder
  • 2 tbsp Paprika
  • 1/4 tbsp Black pepper
  • 1/2 Lemon

For Grevy

  • 1.5 cup Chicken broth
  • Melted butter

Instructions
 

  • Wash the chicken after discarding the giblets bag from the cavity. After cleaning, pat the chicken dry inside and outside with paper towels. Now squeeze the halved lemon and keep the juice aside.
  • Take all the ingredients for seasoning in a bowl. Add the lemon juice and olive oil to the ingredients and stir well to mix them. Now place the chicken with its breast side up and Rub it well with butter. Then apply the seasoning all over it. Try to loosen the chicken skin and sprinkle the seasoning inside. Also, throw some butter and seasoning inside the chicken. And push the squeezed lemon inside the cavity.
  • Now, set your instant pot on after coating it's inside with olive oil. Place the chicken into the pot and let it be slightly brown on both sides. Then take out the chicken with a curving fork and keep it aside.
  • Pour some butter into the pot and add the chicken broth. Also, add the seasoning left in the bowl and stir well. Now place the potatoes into the pot and keep the chicken on top of the potatoes. Then close the lid.
  • Set the instant pot timing at 24 minutes and pressure cook it. After switching off the electric pot, let the pressure release normally. Then transfer the chicken to a dish. Also, transfer the remaining liquid to a bowl to use as gravy if you need it.
  • Now, you can follow an optional step if you like to make the chicken more crunchy. Place the chicken on a baking sheet, sprinkle salt and peppers, and air-fry it for 5 minutes. You can also broil the chicken at 500˚F until it becomes finely brown. After broiling, let it rest for 10 minutes and serve.
  • You can pour the remaining gravy onto the chicken slices and serve. Also, you can make the gravy more delicious by thickening it. So add butter and 1 Tbsp of flour to the gravy and cook it until it becomes thick and brown. Remove from heat and serve with the chicken slices.
