Ingredients
  

  • 6 bell peppers
  • 1/2 pound each Ground turkey & ground chicken
  • 1/2 An onion diced

  • 1 medium-sized zucchini diced
  • 1/2 teaspoon dried thyme

  • 2 Garlic cloves minced
  • 1 Tablespoon tomato paste
  • 1/2 teaspoon each smoked paprika & cumin
  • 1/4 teaspoon cayenne pepper
  • 1/3 cup chicken stock/broth

  • 1 egg

  • 1 cup shredded cheddar cheese

  • 1/2 cup grated parmesan cheese
  • 28 Ounce unsalted can tomato puree
  • Kosher salt & black pepper
  • Avocado or sesame oil

Instructions
 

  • Start with making the stuffing for the peppers. For this, preheat a nonstick pan at medium heat and add two teaspoons of oil to it. Then add the diced onion, zucchini, thyme, and a few chips of pepper to the pan. And sprinkle ½ tbsp of salt to cook the vegetables for 10 minutes. You need to stir the ingredients to mix everything well and avoid sticking to the bottom of the pan.
  • After 10 minutes of cooking, add smoked paprika, cumin, garlic, tomato paste, and cayenne to the pan. Now you will cook them for 3 minutes with frequent stirring. After that, add the chicken stock to the vegetable mixture and cook for 1 minute. Let the liquid be absorbed entirely, and keep the veggie mix aside.
  • Take the ground turkey and chicken in a large bowl. And season the meat with one teaspoon of salt, a few chips of pepper, and an egg. A big spoon will help you to mix everything well. The turkey and chicken should mix thoroughly. Then add the vegetable mixture to the meat and again mix everything well. It will work better if you use your hand to mix everything. If you plan to bake the peppers later, then let the vegetables cool before stuffing them into the peppers. Otherwise, you can work with the hot veggie mixture.
  • Now, it is time to fill the peppers with the stuffing you have just made. You can use a spoon to make your job easy. So take a spoonful of filling and keep it at the top of the pepper. And then push it inside to fill each of the peppers. When you are filling the peppers, you can preheat the oven to 350 Degrees Fahrenheit.
  • Take a baking dish and add the tomato puree, ½ teaspoon of salt, and a few chips of pepper. After mixing the three ingredients, place the stuffed peppers on the dish. Then put an aluminum foil cover on the baking dish and keep it in the preheated oven. Now you will bake the peppers for 30 minutes. And then, remove the aluminum foil and bake for another 30 minutes.
  • You can utilize the time of baking in the preparation of the toppings. So, take a bowl and add cheddar cheese and parmesan to it. You mix the ingredients well and keep them aside. Now take out the peppers from the oven after 1 hour and add the toppings. Now again, bake the stuffed peppers for 30 minutes. This time the internal temperature of the peppers should be 155 Degrees Fahrenheit. A cooking thermometer is the best thing to check the doneness at this stage of cooking.
  • Let your keto stuffed peppers rest for 10 to 15 minutes, and then take them on a serving plate along with some tomato sauce.

Notes

If you want to make keto stuffed peppers, you should opt for the lowest carb bell pepper. So choosing green peppers will be the best way to meet your goal.
Using the cheese in the stuffed peppers is an optional step in the recipe. So you can omit this step and use tomato sauce instead for a healthy diet. Also, you can use chips of avocado, a little cilantro, or chipotle aioli for delighting toppings.
Roasted tomato and smoked paprika make a big difference in taste and flavor. So never skip these two ingredients in the recipe.
