A cozy and comforting salad featuring warm apples, toasted walnuts, and a sweet tangy dressing, perfect for fall.

Ingredients

  • 2 crisp apples (Honeycrisp or Gala)
  • 5 to 6 cups greens (baby spinach, arugula, or a spring mix)
  • 1 cup walnuts, roughly chopped
  • 1 small red onion, thinly sliced
  • 1/2 cup dried cranberries (or raisins)
  • 1/3 cup crumbled feta or goat cheese (optional)
  • 1 to 2 tablespoons olive oil for the pan

Instructions

  1. Toast the walnuts in a dry skillet over medium heat for 3 to 5 minutes until fragrant.
  2. Warm the apples and onion by adding olive oil to the skillet, then adding sliced apples and red onion. Cook for 2 to 4 minutes.
  3. Build the bowl by adding greens, topped with warm apples, onions, toasted walnuts, cranberries, and cheese.
  4. Dress and toss with salad dressing to taste.

Notes

Best served immediately, but components can be stored separately for meal prep. To keep apples from browning, toss with a splash of lemon juice.
