- 2 crisp apples (Honeycrisp or Gala)
- 5 to 6 cups greens (baby spinach, arugula, or a spring mix)
- 1 cup walnuts, roughly chopped
- 1 small red onion, thinly sliced
- 1/2 cup dried cranberries (or raisins)
- 1/3 cup crumbled feta or goat cheese (optional)
- 1 to 2 tablespoons olive oil for the pan
Instructions
- Toast the walnuts in a dry skillet over medium heat for 3 to 5 minutes until fragrant.
- Warm the apples and onion by adding olive oil to the skillet, then adding sliced apples and red onion. Cook for 2 to 4 minutes.
- Build the bowl by adding greens, topped with warm apples, onions, toasted walnuts, cranberries, and cheese.
- Dress and toss with salad dressing to taste.
Notes
Best served immediately, but components can be stored separately for meal prep. To keep apples from browning, toss with a splash of lemon juice.
