A creamy, versatile, and dairy-free alternative to traditional mayonnaise, made with silken tofu, apple cider vinegar, and oil.

Ingredients

  • 1/2 cup Silken tofu
  • 1 tablespoon Apple cider vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Mustard
  • 1/2 teaspoon Salt
  • 1/4 cup Oil (such as canola or olive)

Instructions

  1. Combine 1/2 cup of silken tofu, 1 tablespoon of apple cider vinegar, 1 tablespoon of lemon juice, 1 teaspoon of mustard, and 1/2 teaspoon of salt in a blender or food processor.
  2. Blend the ingredients until smooth and well combined.
  3. Slowly add 1/4 cup of oil while continuing to blend the mixture.
  4. Once the desired consistency is reached, taste the mayonnaise and adjust seasoning if necessary.
  5. Transfer the mayonnaise to a clean jar and store it in the refrigerator for up to one week.

Notes

To achieve perfect emulsion, add oil slowly. Experiment with flavors by adding herbs or spices.
