- 1/2 cup Silken tofu
- 1 tablespoon Apple cider vinegar
- 1 tablespoon Lemon juice
- 1 teaspoon Mustard
- 1/2 teaspoon Salt
- 1/4 cup Oil (such as canola or olive)
Instructions
- Combine 1/2 cup of silken tofu, 1 tablespoon of apple cider vinegar, 1 tablespoon of lemon juice, 1 teaspoon of mustard, and 1/2 teaspoon of salt in a blender or food processor.
- Blend the ingredients until smooth and well combined.
- Slowly add 1/4 cup of oil while continuing to blend the mixture.
- Once the desired consistency is reached, taste the mayonnaise and adjust seasoning if necessary.
- Transfer the mayonnaise to a clean jar and store it in the refrigerator for up to one week.
Notes
To achieve perfect emulsion, add oil slowly. Experiment with flavors by adding herbs or spices.
