Instructions
- In a large pan, heat a little olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Stir in sun-dried tomatoes and cook for another minute.
- Pour in the heavy cream and bring to a gentle simmer.
- Add the butter beans and Italian seasoning, stirring to combine.
- Gradually mix in the grated Parmesan cheese until melted and creamy.
- Season with salt and pepper to taste.
- Simmer for about 10 minutes until heated through.
- Serve warm, garnished with fresh basil if desired.
Notes
For a dairy-free option, substitute heavy cream with coconut cream. Use freshly grated Parmesan for the best flavor.
