- 1 cup sugar
- 1/2 cup light corn syrup
- 1 cup chopped pistachios
Instructions
- Preheat the oven to 350°F (175°C) and grease an 8-inch square baking pan.
- Combine tahini and brown sugar in a large mixing bowl, mixing until smooth.
- Add eggs and vanilla extract, whisking until fully combined.
- Stir in the flour, baking powder, and salt until just incorporated.
- Fold in chopped walnuts or pistachios until evenly distributed.
- Pour the brownie batter into the prepared pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Prepare the pistachio caramel by combining water, sugar, and corn syrup in a saucepan over medium heat.
- Stir until the sugar dissolves and thickens, then add in chopped pistachios.
- Drizzle the pistachio caramel over the cooled brownies and let set before slicing into squares.
Notes
Let the brownies cool completely before slicing for the best texture. Use almond butter for a different flavor.
