A hearty and delicious one-pan meal featuring chickpeas, rice, and vibrant vegetables, all seasoned with taco spices.

Ingredients

  • 1 can Chickpeas, drained and rinsed
  • 1 cup Cooked rice
  • 1 tablespoon Olive oil
  • 1 small Onion, diced
  • 2 cloves Garlic, minced
  • 1 Bell pepper, diced
  • 1 tablespoon Taco seasoning
  • 1 cup Vegetable broth
  • Salt and pepper, to taste
  • Fresh Cilantro for garnish

Instructions

  1. Heat the olive oil over medium heat in a large skillet.
  2. Add the diced onion and bell pepper; sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the chickpeas, cooked rice, taco seasoning, and vegetable broth.
  5. Combine everything and bring to a simmer.
  6. Cook for 5 to 7 minutes until heated through and well combined.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro before serving.

Notes

For added flavor, squeeze fresh lime juice before serving. You can also substitute rice with quinoa for a healthier option.
