- 1 can Chickpeas, drained and rinsed
- 1 cup Cooked rice
- 1 tablespoon Olive oil
- 1 small Onion, diced
- 2 cloves Garlic, minced
- 1 Bell pepper, diced
- 1 tablespoon Taco seasoning
- 1 cup Vegetable broth
- Salt and pepper, to taste
- Fresh Cilantro for garnish
Instructions
- Heat the olive oil over medium heat in a large skillet.
- Add the diced onion and bell pepper; sauté until softened, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the chickpeas, cooked rice, taco seasoning, and vegetable broth.
- Combine everything and bring to a simmer.
- Cook for 5 to 7 minutes until heated through and well combined.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
Notes
For added flavor, squeeze fresh lime juice before serving. You can also substitute rice with quinoa for a healthier option.
