Sweet Potato Nuggets: A healthy twist on a classic favorite, baked to crispy perfection for snacking or as a side.

Ingredients

  • 2 large Sweet Potatoes
  • ½ cup Breadcrumbs
  • ¼ cup Grated Parmesan cheese
  • 1 teaspoon Garlic powder
  • ½ teaspoon Paprika
  • Salt and Pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peeled and chopped sweet potatoes into small cubes.
  3. Boil the cubes in a pot of salted water for around 10 minutes or until fork-tender.
  4. Drain the sweet potatoes and mash them in a bowl until smooth.
  5. Add breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix until all ingredients are well combined.
  6. Form the mixture into nugget shapes.
  7. Place the nuggets on a baking sheet lined with parchment paper and drizzle lightly with olive oil.
  8. Bake in the oven for 20-25 minutes, flipping halfway through until golden and crispy.
