- 2 large Sweet Potatoes
- ½ cup Breadcrumbs
- ¼ cup Grated Parmesan cheese
- 1 teaspoon Garlic powder
- ½ teaspoon Paprika
- Salt and Pepper to taste
- Olive oil for drizzling
Instructions
- Preheat the oven to 425°F (220°C).
- Peeled and chopped sweet potatoes into small cubes.
- Boil the cubes in a pot of salted water for around 10 minutes or until fork-tender.
- Drain the sweet potatoes and mash them in a bowl until smooth.
- Add breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper. Mix until all ingredients are well combined.
- Form the mixture into nugget shapes.
- Place the nuggets on a baking sheet lined with parchment paper and drizzle lightly with olive oil.
- Bake in the oven for 20-25 minutes, flipping halfway through until golden and crispy.
