Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch square baking pan.
- Combine flour, 1/4 cup granulated sugar, softened butter, and salt in a mixing bowl. Mix until a crumbly dough forms. Press this mixture firmly into the bottom of the prepared baking pan.
- Bake the crust for 15 minutes, then remove and let it cool slightly.
- Beat together the softened cream cheese and 1/2 cup granulated sugar until smooth. Add in sour cream, eggs, and vanilla extract, mixing until well combined.
- Pour the cheesecake filling onto the cooled crust, spreading it evenly. Bake for an additional 25-30 minutes, or until the center is set and slightly jiggles.
- Prepare the strawberry topping by combining sliced strawberries, 1/4 cup granulated sugar, and lemon juice in a bowl. Let this mixture sit for about 10 minutes to macerate.
- Once the cheesecake has cooled completely, top it with the macerated strawberries. Cut into bars and serve chilled or at room temperature.
