  • 1 tablespoon Lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×9-inch square baking pan.
  2. Combine flour, 1/4 cup granulated sugar, softened butter, and salt in a mixing bowl. Mix until a crumbly dough forms. Press this mixture firmly into the bottom of the prepared baking pan.
  3. Bake the crust for 15 minutes, then remove and let it cool slightly.
  4. Beat together the softened cream cheese and 1/2 cup granulated sugar until smooth. Add in sour cream, eggs, and vanilla extract, mixing until well combined.
  5. Pour the cheesecake filling onto the cooled crust, spreading it evenly. Bake for an additional 25-30 minutes, or until the center is set and slightly jiggles.
  6. Prepare the strawberry topping by combining sliced strawberries, 1/4 cup granulated sugar, and lemon juice in a bowl. Let this mixture sit for about 10 minutes to macerate.
  7. Once the cheesecake has cooled completely, top it with the macerated strawberries. Cut into bars and serve chilled or at room temperature.
