Spicy Lemon Vinaigrette with Capers

A bold and flavorful dressing that brightens up greens and roasted veggies with the tang of lemon, briny capers, and a kick of spice.

Ingredients

  • 1/2 cup Extra virgin olive oil
  • 1/4 cup Fresh lemon juice
  • 1 tsp Fennel seeds
  • 1/2 tsp Red pepper flakes (adjust according to heat preference)
  • Salt (to taste)
  • Black pepper (to taste)
  • 1/4 cup Sliced red onion
  • 2 tbsp Rinsed capers

Instructions

  1. Wake up the spices by crushing fennel seeds and black peppercorns using a mortar and pestle (or rub between fingers if using ground pepper).
  2. Add lemon juice, salt, red pepper flakes, crushed fennel and black pepper to a jar and mix.
  3. Pour in the olive oil, seal the jar, and shake until emulsified.
  4. Fold in thinly sliced red onion and rinsed capers, let sit for 5 minutes to meld flavors.
  5. Taste and adjust seasoning as needed.

Notes

Let the dressing sit for a few hours to enhance the flavor before using. Shake well before each use as it may separate.
