  • 2 medium Zucchinis
  • 1 cup White vinegar
  • 1 cup Water
  • 1 tablespoon Salt
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Paprika
  • Salt (to taste)

Instructions

  1. Preheat your oven to 225°F (110°C).
  2. Slice the zucchinis thinly using a mandoline or sharp knife, aiming for about 1/8 inch thick.
  3. Mix the white vinegar, water, and 1 tablespoon of salt in a bowl to create the brine.
  4. Soak the zucchini slices in the vinegar mixture for about 30 minutes.
  5. Drain the slices and gently pat them dry with paper towels.
  6. Toss the dried zucchini slices in olive oil, garlic powder, paprika, and additional salt, if desired.
  7. Arrange the slices in a single layer on a baking sheet.
  8. Bake for about 2 hours, flipping halfway through, until crispy and golden.

Notes

For a sweeter taste, you can substitute white vinegar with apple cider vinegar. Ensure even slicing for uniform cooking.
