Ingredients

  • 2 whole oranges
  • 1 cup sugar
  • 3 large eggs
  • 1 cup olive oil
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
  2. Wash the oranges and cut them into quarters, removing any seeds.
  3. Blend the quarters of oranges in a blender or food processor until smooth to create a puree.
  4. Combine the orange puree, sugar, and eggs in a large mixing bowl and mix until well incorporated.
  5. Gradually add the olive oil while mixing to combine evenly.
  6. Whisk together the flour, baking powder, and salt in another bowl. Gradually add this dry mixture to the wet ingredients, stirring until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  10. Dust with powdered sugar before serving, if desired.

Notes

Ensure the oranges are well washed before blending. Can substitute olive oil with melted coconut oil.
