A vibrant and flavorful dish featuring roasted zucchini, cherry tomatoes, and halloumi cheese, perfect as a main or side.

Ingredients

  • 2 Zucchini, sliced
  • 2 Yellow Squash, sliced
  • 2 cups Cherry Tomatoes, halved
  • 1 large Onion, chopped
  • 3 cloves Garlic, minced
  • 1 block Halloumi Cheese, sliced
  • 2 tablespoons Olive Oil
  • Salt and Pepper, to taste
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Thyme

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the sliced zucchini, yellow squash, halved cherry tomatoes, chopped onion, and minced garlic on a large sheet pan. Drizzle with olive oil and season with salt, pepper, oregano, and thyme. Toss to coat.
  3. Spread the vegetables in a single layer on the sheet pan.
  4. Place the slices of halloumi cheese on top of the vegetable mixture.
  5. Roast in the preheated oven for 25-30 minutes, until the vegetables are tender and slightly caramelized.
  6. Serve warm, either on its own or with crusty bread.

Notes

Spread vegetables evenly for even roasting. Substitute feta for halloumi for a different flavor.
