  • 1 tablespoon Baking powder
  • 1/2 teaspoon Salt
  • 1/2 cup Unsalted butter, softened
  • 1 cup Milk
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh peaches, diced
  • 1/2 cup Brown sugar
  • 1 teaspoon Ground cinnamon
  • 1/4 cup All-purpose flour (for streusel)
  • 1/4 cup Unsalted butter (melted, for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. Whisk together the flour, granulated sugar, baking powder, and salt in a large bowl.
  3. Beat together the softened butter, milk, eggs, and vanilla extract until smooth in another bowl.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the diced peaches gently to evenly distribute throughout the batter.
  6. Mix the brown sugar, cinnamon, and flour for the streusel in a separate bowl, then combine with the melted butter until crumbly.
  7. Fill each muffin cup with batter, and sprinkle the streusel on top.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean.
  9. Allow to cool before serving.

Notes

Don’t overmix the batter to keep the muffins fluffy. Use ripe peaches for the best flavor.
