- 2 cups Fresh peaches, diced
- 1/2 cup Brown sugar
- 1 teaspoon Ground cinnamon
- 1/4 cup All-purpose flour (for streusel)
- 1/4 cup Unsalted butter (melted, for streusel)
Instructions
- Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
- Whisk together the flour, granulated sugar, baking powder, and salt in a large bowl.
- Beat together the softened butter, milk, eggs, and vanilla extract until smooth in another bowl.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the diced peaches gently to evenly distribute throughout the batter.
- Mix the brown sugar, cinnamon, and flour for the streusel in a separate bowl, then combine with the melted butter until crumbly.
- Fill each muffin cup with batter, and sprinkle the streusel on top.
- Bake for 20-25 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
Don’t overmix the batter to keep the muffins fluffy. Use ripe peaches for the best flavor.
