Instructions
- Cook the pasta according to package instructions until al dente. Drain and allow it to cool completely.
- In a large bowl, combine the cooled pasta with cherry tomatoes, capers, red onion, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until emulsified.
- Pour the dressing over the pasta salad and toss well to combine all the ingredients.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
Notes
Chill the salad before serving for the best flavor. For a healthier option, use whole wheat pasta.
