Ingredients

  • 1 cup applesauce
  • 1/2 cup milk
  • 1/4 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup flour (whole wheat or all-purpose)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease or line a muffin tin with paper liners.
  2. Combine the rolled oats, applesauce, milk, honey, vegetable oil, and vanilla extract in a large bowl. Stir until well mixed.
  3. Whisk together the flour, baking powder, baking soda, cinnamon, and salt in another bowl.
  4. Add the dry ingredients to the wet mixture and stir until just combined. Be careful not to overmix.
  5. Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Allow the muffins to cool for a few minutes before transferring them to a wire rack to cool completely.

Notes

Do not overmix the batter for perfect muffins. Customize with nuts or dried fruits for added flavor.
