- 8 oz Whole grain pasta
- 1 cup Cashews (soaked for 2 hours)
- 1 cup Vegetable broth
- 2 cloves Garlic
- 1 cup Spinach
- 1/2 cup Nutritional yeast
- 1 tablespoon Olive oil
- Salt and pepper To taste
- Cherry tomatoes for garnish As desired
Instructions
- Cook the pasta according to the package instructions until al dente. Drain and set aside.
- Combine soaked cashews, vegetable broth, garlic, and nutritional yeast in a blender. Blend until smooth and creamy.
- Heat the olive oil in a large skillet over medium heat. Add spinach and sauté until wilted.
- Pour the cashew sauce into the skillet and stir to combine with spinach.
- Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper.
- Serve the pasta warm, garnished with cherry tomatoes.
Notes
Soak cashews for at least 2 hours for best creaminess. For a nut-free option, substitute cashews with sunflower seeds.
