Ingredients

  • 8 oz Whole grain pasta
  • 1 cup Cashews (soaked for 2 hours)
  • 1 cup Vegetable broth
  • 2 cloves Garlic
  • 1 cup Spinach
  • 1/2 cup Nutritional yeast
  • 1 tablespoon Olive oil
  • Salt and pepper To taste
  • Cherry tomatoes for garnish As desired

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Combine soaked cashews, vegetable broth, garlic, and nutritional yeast in a blender. Blend until smooth and creamy.
  3. Heat the olive oil in a large skillet over medium heat. Add spinach and sauté until wilted.
  4. Pour the cashew sauce into the skillet and stir to combine with spinach.
  5. Add the cooked pasta to the skillet and toss everything together. Season with salt and pepper.
  6. Serve the pasta warm, garnished with cherry tomatoes.

Notes

Soak cashews for at least 2 hours for best creaminess. For a nut-free option, substitute cashews with sunflower seeds.
