Ingredients

  • 1 3/4 cup cooked brown or green lentils
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • 1/2 cup cherry tomatoes, halved
  • 1 tbsp Dijon mustard
  • 1 tbsp real maple syrup
  • 1 tbsp organic extra virgin olive oil
  • 1/2 tbsp lemon juice
  • 1 tbsp water
  • Sea salt and freshly ground black pepper, to taste

Instructions

  1. Combine the cooked lentils, finely chopped red onion, chopped fresh parsley, and halved cherry tomatoes in a large mixing bowl. Toss gently to mix.
  2. Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together.
  3. Whisk together the Dijon mustard, maple syrup, olive oil, lemon juice, and water in a small bowl until fully combined. Season with sea salt and freshly ground black pepper to taste.
  4. Drizzle the dressing over the chilled lentil salad just before serving and toss well to coat all the ingredients evenly.

Notes

Chill the salad for at least an hour for the best flavor. You can replace lentils with chickpeas for a different flavor and texture.
