A bright and herby dressing that combines lemon, thyme, and maple for a deliciously balanced vinaigrette, perfect for salads and roasted veggies.

Ingredients

  • 1/4 cup fresh thyme (or regular thyme)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tablespoons maple syrup
  • 1/2 cup extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • Salt to taste

Instructions

  1. Grab a small bowl or jar with a lid.
  2. Add lemon juice, maple syrup, mustard, and a pinch of salt.
  3. Whisk it until smooth and slightly thick.
  4. Slowly drizzle in the olive oil while whisking, for about 30 to 45 seconds.
  5. Stir in the thyme and lemon zest.
  6. Taste and adjust with more salt, maple, or lemon as needed.
  7. If using a jar, add everything, tighten the lid, and shake for 20 seconds.

Notes

Shake well before each use. Homemade dressings may separate, but will blend back together with a shake.
