Instructions

  2. Whisk together the flour, baking soda, and salt until combined.
  3. Cream together the softened butter and granulated sugar until smooth and fluffy.
  4. Beat in the egg, then stir in the lemon juice, lemon zest, and vanilla.
  5. Blend in the dry ingredients until just combined.
  6. Roll the dough into small balls and coat them in powdered sugar.
  7. Space them on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are lightly golden.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
