Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, and salt until combined.
- Cream together the softened butter and granulated sugar until smooth and fluffy.
- Beat in the egg, then stir in the lemon juice, lemon zest, and vanilla.
- Blend in the dry ingredients until just combined.
- Roll the dough into small balls and coat them in powdered sugar.
- Space them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
