- 1 cup low-fat cottage cheese
- 1 cup fresh blueberries
- 1 tablespoon lemon zest
- 2 tablespoons honey (or maple syrup for a vegan alternative)
- 1/2 cup almond flour
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- In a mixing bowl, gently combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt. Mix carefully to prevent crushing the blueberries.
- Chill the mixture in the refrigerator for 15-20 minutes.
- Once chilled, use a tablespoon to scoop out portions of the mixture and roll them into balls. Arrange on a parchment-lined baking sheet.
- If desired, preheat your oven to 325°F (160°C) and bake for 8-10 minutes for a slightly toasted exterior. Alternatively, enjoy them chilled.
- Drizzle honey over the top for added sweetness and garnish with extra blueberries if desired.
