- 8 oz Pasta (e.g., rotini or penne)
- 2 cups Fresh corn (grilled or boiled)
- 1 cup Cherry tomatoes, halved
- 1/2 cup Red onion, finely chopped
- 1/2 cup Bell pepper, diced
- 1/4 cup Fresh cilantro, chopped
- 1/2 cup Feta cheese, crumbled
- 1/4 cup Olive oil
- 2 tablespoons Lime juice
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until al dente. Drain the pasta and allow it to cool completely.
- In a large bowl, combine the cooled pasta, fresh corn, cherry tomatoes, red onion, bell pepper, and cilantro.
- In a separate bowl, whisk together the olive oil, lime juice, salt, and pepper until well blended.
- Pour the dressing over the pasta salad mixture and toss gently to combine everything evenly.
- Add the crumbled feta cheese and carefully fold it into the salad.
- Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
Notes
Chill for better flavor. You can substitute gluten-free pasta or plant-based cheese as needed.
