Ingredients

  • 8 oz Pasta (e.g., rotini or penne)
  • 2 cups Fresh corn (grilled or boiled)
  • 1 cup Cherry tomatoes, halved
  • 1/2 cup Red onion, finely chopped
  • 1/2 cup Bell pepper, diced
  • 1/4 cup Fresh cilantro, chopped
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Olive oil
  • 2 tablespoons Lime juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain the pasta and allow it to cool completely.
  2. In a large bowl, combine the cooled pasta, fresh corn, cherry tomatoes, red onion, bell pepper, and cilantro.
  3. In a separate bowl, whisk together the olive oil, lime juice, salt, and pepper until well blended.
  4. Pour the dressing over the pasta salad mixture and toss gently to combine everything evenly.
  5. Add the crumbled feta cheese and carefully fold it into the salad.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes
