A vibrant and fresh salad combining earthy greens, sun-dried tomatoes, and artichokes, perfect for a light lunch or side dish.

Ingredients

  • 2 cups Spinach
  • 2 cups Arugula
  • 1/2 cup Sun-Dried Tomatoes
  • 1 cup Artichokes
  • 1 cup Tomatoes, chopped
  • 1/3 cup Pine Nuts
  • 1/2 cup Parmesan Cheese, grated
  • Italian Dressing, to taste

Instructions

  1. Combine the fresh spinach and arugula in a large mixing bowl.
  2. Add the sun-dried tomatoes, artichokes, and fresh tomatoes to the mix.
  3. Toss in the pine nuts and sprinkle with grated Parmesan cheese.
  4. Drizzle your homemade Italian dressing over the salad.
  5. Toss gently to combine all ingredients.
  6. Serve immediately as a side dish or light lunch.
