Ingredients

  • 1/2 cup Powdered sugar
  • 1/2 cup Granulated sugar
  • 1/2 cup Unsalted butter, softened
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Peach preserves
  • 1/2 cup Chopped fresh peaches
  • 1/4 teaspoon Almond extract
  • Powdered sugar for dusting, To taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, powdered sugar, and granulated sugar until smooth and light.
  3. Add the egg, vanilla extract, and almond extract to the mixture, mixing well.
  4. Whisk together the all-purpose flour, baking powder, and salt. Gradually add to the butter mixture until combined.
  5. Fold in the chopped peaches gently into the dough.
  6. Drop tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, or until lightly golden.
  8. Remove from the oven and let cool for a few minutes before filling each cookie with peach preserves.
  9. Dust with powdered sugar before serving.

Notes

Chill the dough for better handling. Consider using apricot preserves for a twist.
