- 1 large Egg

- 1/4 cup Cinnamon-sugar mix (for topping)
- Oil for frying (as needed)
Instructions
- In a large bowl, whisk together the all-purpose flour, sugar, baking powder, salt, and cinnamon until well combined.
- In another bowl, whisk together the milk, egg, and melted butter until smooth.
- Pour the wet ingredients into the dry ingredients, and mix until just combined, ensuring not to overmix.
- Heat a skillet over medium heat and add a little oil to coat the surface.
- Pour the batter onto the skillet to form pancakes of desired size, and cook until bubbles form on the surface.
- Carefully flip the pancakes and cook until golden brown on both sides.
- Remove from the heat and sprinkle with the cinnamon-sugar mix before serving.
Notes
Don’t overmix the batter for softer pancakes. These pancakes can be topped with fresh fruit, whipped cream, or chocolate chips.
