  • 1 large Egg
  • 2 tablespoons Melted butter
  • 1/4 cup Cinnamon-sugar mix (for topping)
  • Oil for frying (as needed)

Instructions

  1. In a large bowl, whisk together the all-purpose flour, sugar, baking powder, salt, and cinnamon until well combined.
  2. In another bowl, whisk together the milk, egg, and melted butter until smooth.
  3. Pour the wet ingredients into the dry ingredients, and mix until just combined, ensuring not to overmix.
  4. Heat a skillet over medium heat and add a little oil to coat the surface.
  5. Pour the batter onto the skillet to form pancakes of desired size, and cook until bubbles form on the surface.
  6. Carefully flip the pancakes and cook until golden brown on both sides.
  7. Remove from the heat and sprinkle with the cinnamon-sugar mix before serving.

Notes

Don’t overmix the batter for softer pancakes. These pancakes can be topped with fresh fruit, whipped cream, or chocolate chips.
