Ingredients

  • 6 Large Eggs
  • 1/4 cup Mayonnaise
  • 2 tablespoons Dijon Mustard
  • 1 tablespoon White Vinegar
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1/4 teaspoon Smoked Paprika
  • 1 tablespoon Chives or Green Onions (chopped)

Instructions

  1. Hard boil the eggs: Place eggs in a saucepan, cover with cold water, bring to a boil, cover, and turn off heat. Let sit for 12 minutes.
  2. Cool and peel the eggs: Transfer eggs to a bowl of cold water to cool, then peel under running water.
  3. Prepare the creamy filling: Remove yolks, mash and mix with mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and smoked paprika until smooth. Fill egg whites with the yolk mixture and sprinkle with chives or green onions. Refrigerate until serving.

Notes

For a polished look, consider using a piping bag to fill the eggs. These are best served chilled.
