- 1 pound fresh carrots (peeled and sliced at an angle, 1/4-inch thick)
- 1/2 cup chicken broth or stock
- 3 tablespoons honey (divided)
- 1/2 teaspoon salt
- 1 tablespoon butter
- 1/2 teaspoon minced fresh thyme
- 2 teaspoons lemon juice
- Freshly ground black pepper (to taste)
Instructions
- In a skillet over medium-high heat, combine the sliced carrots, chicken broth, 1 tablespoon of honey, and salt. Bring the mixture to a boil.
- Once boiling, reduce the heat to medium and cover the skillet. Allow the carrots to simmer for 5 minutes or until they are almost tender.
- Uncover the skillet and increase the heat to high. Cook until the liquid is reduced down to just a couple of tablespoons.
- Add the butter, remaining honey, and thyme to the skillet. Toss the carrots until the butter melts, and their surfaces become coated in the glaze.
- Continue to cook for an additional 3 to 5 minutes until the carrots are tender, and the glaze is thickened and golden brown.
- Stir in lemon juice and season with freshly ground black pepper. Serve immediately for the best flavor.
Notes
Cut carrots at an angle for better presentation and quicker cooking. For a vegetarian option, substitute vegetable broth for chicken broth.
