Scale
  • 1 cup Glutinous rice flour
  • 1/4 cup Sugar
  • 1 cup Water
  • 10 Fresh strawberries, hulled
  • Cornstarch or potato starch for dusting

Instructions

  1. In a microwave-safe bowl, mix the glutinous rice flour, sugar, and water until smooth.
  2. Cover the bowl with plastic wrap and microwave for 1 minute.
  3. Stir the mixture, then microwave for an additional 1-2 minutes until the mochi mixture thickens and becomes translucent.
  4. Dust your surface with cornstarch or potato starch, then transfer the mochi dough onto it.
  5. Let it cool slightly before kneading the dough gently with cornstarch to prevent sticking.
  6. Divide the dough into small pieces, flatten each piece in your palm, and place a strawberry in the center.
  7. Wrap the dough around the strawberry and shape it into a ball.
  8. Roll the finished mochi in cornstarch to prevent sticking.

Notes

Dust with plenty of cornstarch to prevent sticking. Use ripe strawberries for the best flavor.
