A vibrant and flavorful grilled vegetable platter perfect for summer gatherings and healthy eating.

Ingredients

  • 2 zucchinis, sliced into 1/2-inch rounds
  • 3 bell peppers, sliced (red, yellow, and green)
  • 1 bunch of asparagus, trimmed
  • 1 cup of cherry tomatoes, left whole
  • 3 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons of balsamic vinegar

Instructions

  1. In a large bowl, toss the sliced zucchinis, bell peppers, asparagus, and cherry tomatoes with olive oil, salt, and pepper until well-coated.
  2. Preheat the grill to medium heat, then place the vegetables directly on the grill. Grill for 5-7 minutes on each side or until charred and tender.
  3. Remove the vegetables from the grill, drizzle with balsamic vinegar, and serve immediately.

Notes
