Ingredients

  • 3 ripe bananas
  • 1 cup Greek yogurt
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the ripe bananas until smooth in a mixing bowl.
  3. Add the Greek yogurt, eggs, honey (or maple syrup), and vanilla extract. Mix until well combined.
  4. Whisk together the whole wheat flour, baking soda, salt, and cinnamon in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Use very ripe bananas for the best flavor. Maple syrup can replace honey if desired.
