- 3 ripe bananas
- 1 cup Greek yogurt
- 2 eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mash the ripe bananas until smooth in a mixing bowl.
- Add the Greek yogurt, eggs, honey (or maple syrup), and vanilla extract. Mix until well combined.
- Whisk together the whole wheat flour, baking soda, salt, and cinnamon in another bowl.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
Use very ripe bananas for the best flavor. Maple syrup can replace honey if desired.
