Ingredients
Scale
- 1 cup long-grain rice
- 2 cups chicken broth
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
Instructions
- Bring the chicken broth to a boil in a pot.
- Add the long-grain rice, stir to combine, and reduce heat to a simmer. Cover and cook according to the package instructions, usually about 15-20 minutes.
- Once the rice is cooked, remove it from heat and add the lemon juice, lemon zest, olive oil, salt, and black pepper. Stir well to combine all ingredients.
- Fluff the rice with a fork and stir in fresh parsley just before serving. This adds freshness and color to your dish. Enjoy as a flavorful side dish!
Notes
Use fresh lemon for the best flavor. For a vegetarian option, substitute vegetable broth for chicken broth.
