- 1 small Shallot, diced
- 1 1/2 cups Lacinato kale, ribs removed and finely chopped
- 1 large clove Garlic, minced
- 1/4 to 1/2 tsp Dried oregano, to taste
- Pinch Crushed red pepper flakes, to taste
- Sea salt and freshly cracked black pepper, to taste
- 1 (15-oz) can White cannellini beans, drained and rinsed
- 3 tbsp Chicken broth or vegetable broth
- 3 tbsp Heavy cream
- 3 tbsp Parmesan, finely grated, plus more for serving
- Lemon wedges, for serving, optional
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the diced shallot and cook, stirring often, for about 2 to 3 minutes until tender.
- Add the finely chopped kale, minced garlic, oregano, crushed red pepper flakes, and seasonings. Cook, stirring constantly for about 1 minute until the kale begins to wilt.
- Stir in the drained white beans, chicken broth, and heavy cream. Mix until well combined and allow it to simmer for about 10 minutes to let the flavors meld.
- Incorporate the grated parmesan cheese, stirring until melted. Taste and adjust the seasoning with additional sea salt and pepper, if needed.
- Transfer to a serving bowl and garnish with more parmesan cheese and lemon wedges for an added zesty touch.
Notes
Adjust the seasoning to enhance flavor. For a vegan option, swap heavy cream for plant-based cream and omit cheese.
