  • 4 medium Sweet potatoes
  • 1 cup Ricotta cheese
  • 1 cup Fresh spinach, chopped
  • ½ cup Mozzarella cheese, shredded
  • ½ teaspoon Garlic powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • ½ cup Balsamic vinegar
  • ¼ cup Cranberry sauce
  • 1 tablespoon Honey

Instructions

  1. Preheat the oven to 400°F (200°C). Poke holes in each sweet potato with a fork to allow steam to escape and place them on a baking sheet. Bake for 45 to 50 minutes until they are fork-tender.
  2. While the sweet potatoes are roasting, prepare the balsamic glaze. In a small saucepan, combine the balsamic vinegar, cranberry sauce, and honey. Simmer over medium heat for about 5 minutes, stirring occasionally, until the mixture thickens slightly. Set aside.
  3. Once the sweet potatoes are cooked, let them cool for a few minutes. Carefully slice each sweet potato open and scoop out a small portion of the flesh into a mixing bowl, leaving a border to maintain the potato’s shape.
  4. To the bowl, add ricotta cheese, chopped spinach, shredded mozzarella, garlic powder, salt, and black pepper. Mix until all ingredients are well combined. Spoon the filling back into the sweet potato skins.
  5. Place the stuffed sweet potatoes back on the baking sheet and return them to the oven. Bake for an additional 10 minutes, or until heated through and the cheese is slightly melted.
  6. Remove from the oven and drizzle the balsamic cranberry glaze over the stuffed potatoes. Serve warm and enjoy!

Notes

Ensure sweet potatoes are fork-tender for easier stuffing. You can substitute cottage cheese for ricotta for added protein.
