A vibrant and nutritious salad combining quinoa, cranberries, and feta cheese, perfect as a refreshing side or a light meal.

Ingredients

  • 1 cup Quinoa
  • 2 cups Water or vegetable broth
  • 1 cup Cranberries (dried or fresh)
  • 1 cup Feta cheese, crumbled
  • 1/2 cup Red onion, chopped
  • 1/2 cup Almonds or walnuts, chopped
  • 1/4 cup Parsley, chopped
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove any bitterness. In a medium pot, combine the rinsed quinoa and water or vegetable broth, bringing it to a boil.
  2. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until all the liquid is absorbed.
  3. Fluff the quinoa with a fork and allow it to cool before proceeding.
  4. In a large bowl, combine the cooled quinoa, cranberries, crumbled feta, chopped red onion, nuts, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper to create the dressing.
  6. Pour the dressing over the salad and toss until everything is well combined. Serve immediately or refrigerate for later.

Notes

For extra flavor, use vegetable broth. Substitute feta with goat cheese for variation. Let the salad chill for an hour to let flavors meld.
