Delightful and nutritious fritters combining creamy sweet potatoes and hearty chickpeas, perfect as snacks or light meals.

Ingredients

  • 1 cup cooked and mashed chickpeas
  • 1 cup cooked and mashed sweet potatoes
  • 1/2 cup oat flour
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • Oil for frying, as needed

Instructions

  1. In a large bowl, combine the mashed chickpeas and sweet potatoes until well blended.
  2. Add the oat flour, chopped onion, minced garlic, cumin, paprika, salt, and pepper to the mixture. Stir until all ingredients are thoroughly combined.
  3. Heat oil in a frying pan over medium heat, ensuring there’s enough oil to coat the bottom of the pan.
  4. Scoop small portions of the mixture and form them into patties, approximately 2-3 inches in diameter.
  5. Fry each fritter for about 2-3 minutes on each side or until they are golden brown and crispy.
  6. Remove the fritters from the pan and place them on paper towels to drain excess oil.
  7. Serve warm with your favorite dipping sauce.

Notes

Ensure the oil is adequately heated for a crispy finish. You can also use gluten-free flour if needed.
