Instructions

- Pour the beaten eggs over the cooked potatoes in the skillet.
- Cook gently, stirring, until the eggs are set but still soft.
- Sprinkle shredded cheese on top and allow it to melt before serving.
- Serve hot, garnished with chopped green onions or herbs if desired.

Cook the potatoes until golden for best flavor. You can swap regular potatoes for sweet potatoes for a different taste.
