- 1 cup mixed chopped vegetables (carrots, bell peppers, spinach)
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 package spring roll wrappers or phyllo dough
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Combine the mixed chopped vegetables, shredded cheese, garlic powder, onion powder, salt, and pepper in a mixing bowl.
- Take a spring roll wrapper and place about a tablespoon of the vegetable mixture in the center.
- Fold the sides of the wrapper over the filling and roll it up tightly.
- Place the rolled vegetable rolls on a baking sheet lined with parchment paper.
- Brush the tops of the rolls with olive oil.
- Bake for 20-25 minutes or until they are golden and crispy.
- Serve warm as an appetizer or snack.
Notes
Don’t overfill the wrappers to prevent bursting during baking. Try different vegetables or cheeses to customize your rolls.
