Ingredients

  • 1 cup mixed chopped vegetables (carrots, bell peppers, spinach)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 package spring roll wrappers or phyllo dough
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the mixed chopped vegetables, shredded cheese, garlic powder, onion powder, salt, and pepper in a mixing bowl.
  3. Take a spring roll wrapper and place about a tablespoon of the vegetable mixture in the center.
  4. Fold the sides of the wrapper over the filling and roll it up tightly.
  5. Place the rolled vegetable rolls on a baking sheet lined with parchment paper.
  6. Brush the tops of the rolls with olive oil.
  7. Bake for 20-25 minutes or until they are golden and crispy.
  8. Serve warm as an appetizer or snack.

Notes
