- 1/2 cup honey
- 2 large eggs

- Pistachios for garnish, as needed
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking dish.
- Combine graham cracker crumbs and melted butter in a mixing bowl, then press the mixture evenly into the bottom of the prepared baking dish.
- Beat the softened cream cheese in another bowl with an electric mixer until smooth. Add Greek yogurt, honey, eggs, and vanilla extract, mixing until thoroughly combined.
- Fold in the crushed pistachios, ensuring they are evenly distributed throughout the mixture.
- Pour the cheesecake mixture over the crust in the baking dish. Use a rubber spatula to spread it evenly.
- Bake for 25-30 minutes or until the center is set and a little jiggly.
- Allow the bars to cool at room temperature before refrigerating for at least 2 hours to set completely.
- Cut into bars, serve chilled, and garnish with additional pistachios as desired.
Notes
Chill the bars thoroughly for best flavor and texture. You can also top with seasonal fruits for an elevated presentation.
