A delightful and comforting dish featuring rich caramelized onions and creamy coconut cream, perfect for weeknight dinners.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 8 oz pasta of choice
  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup coconut cream or dairy-free cream
  • Salt to taste
  • Pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. Cook the pasta according to the package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat, then add the sliced onions and cook, stirring frequently, until they are caramelized (about 20-25 minutes).
  3. Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant.
  4. Pour in the vegetable broth and bring it to a simmer. Let it reduce slightly for about 5 minutes.
  5. Stir in the coconut cream and mix well. Cook for another 2-3 minutes until the sauce becomes creamy.
  6. Add the cooked pasta to the skillet, tossing to coat it in the sauce. Season with salt and pepper to taste.
  7. Serve warm, garnished with chopped fresh parsley.

Notes

Let the onions caramelize slowly for the best flavor. You can substitute coconut cream with any dairy-free cream or regular heavy cream.
