- 2 large onions, thinly sliced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup coconut cream or dairy-free cream
- Salt to taste
- Pepper to taste
- Chopped fresh parsley for garnish
Instructions
- Cook the pasta according to the package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat, then add the sliced onions and cook, stirring frequently, until they are caramelized (about 20-25 minutes).
- Add the minced garlic to the skillet and cook for 1-2 minutes until fragrant.
- Pour in the vegetable broth and bring it to a simmer. Let it reduce slightly for about 5 minutes.
- Stir in the coconut cream and mix well. Cook for another 2-3 minutes until the sauce becomes creamy.
- Add the cooked pasta to the skillet, tossing to coat it in the sauce. Season with salt and pepper to taste.
- Serve warm, garnished with chopped fresh parsley.
Notes
Let the onions caramelize slowly for the best flavor. You can substitute coconut cream with any dairy-free cream or regular heavy cream.
