- 2 cups cantaloupe, skin removed and cut into chunks
- 2 cups cucumber, chopped into half-moons
- 1/2 cup feta cheese, crumbled
- Approx. 15 large fresh mint leaves, torn or chopped
- 2 Tbsp olive oil
- Juice of 1 lime
- Salt + pepper, to taste
Instructions
- Prep all the ingredients by removing the skin and seeds from the cantaloupe and cutting it into bite-sized chunks. Chop the cucumber into half-moon shapes and crumble the feta cheese.
- Place all the prepared ingredients into a large serving bowl.
- Drizzle olive oil and freshly squeezed lime juice over the salad. Season with salt and pepper to taste.
- Toss everything together gently to ensure an even coating of dressing.
- Serve immediately, or chill in the refrigerator for about 30 minutes to enhance the flavors before serving.
Notes
Chill the salad for 30 minutes for enhanced flavor. For a twist, substitute feta with crumbled goat cheese.
