A refreshing summer salad made with sweet cantaloupe, crisp cucumber, crumbled feta cheese, and aromatic mint, offering a delightful balance of flavors.

Ingredients

  • 2 cups cantaloupe, skin removed and cut into chunks
  • 2 cups cucumber, chopped into half-moons
  • 1/2 cup feta cheese, crumbled
  • Approx. 15 large fresh mint leaves, torn or chopped
  • 2 Tbsp olive oil
  • Juice of 1 lime
  • Salt + pepper, to taste

Instructions

  1. Prep all the ingredients by removing the skin and seeds from the cantaloupe and cutting it into bite-sized chunks. Chop the cucumber into half-moon shapes and crumble the feta cheese.
  2. Place all the prepared ingredients into a large serving bowl.
  3. Drizzle olive oil and freshly squeezed lime juice over the salad. Season with salt and pepper to taste.
  4. Toss everything together gently to ensure an even coating of dressing.
  5. Serve immediately, or chill in the refrigerator for about 30 minutes to enhance the flavors before serving.

Notes

Chill the salad for 30 minutes for enhanced flavor. For a twist, substitute feta with crumbled goat cheese.
