A crisp and refreshing salad combining crunchy cabbage and sweet apples with toasted walnuts, perfect for a light lunch or side dish.

Ingredients

  • 1 medium head crispy green or red cabbage
  • 2 sweet apples
  • ⅓ cup toasted walnuts
  • ¼ cup shaved parmesan cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • ½ teaspoon sea salt
  • Freshly cracked black pepper to taste

Instructions

  1. Start by slicing the cabbage. Remove the outer leaves, cut the cabbage in half through the core, then slice each half into segments, discarding the white core. Finely slice the cabbage and add it to a large salad bowl.
  2. Next, prepare the apples. Cut them into quarters, remove the core, and thinly slice them or dice into cubes. Add the apple pieces to the bowl with the cabbage.
  3. Toast the walnuts in a frying pan over medium heat. Drizzle a little olive oil and stir the walnuts for about 5 minutes until they are fragrant and golden brown. Chop the walnuts coarsely and reserve some for garnishing, then add the remaining to the bowl.
  4. In a glass jar, combine the dressing ingredients: olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper. Secure the lid and shake until well combined and emulsified.
  5. Pour half of the dressing over the salad, add half of the parmesan cheese, and toss everything gently until well combined. Taste and adjust seasoning if necessary. Allow the salad to rest for at least 10 minutes before serving to let the flavors meld.

Notes

Let the salad sit for 10 minutes to enhance the flavors. You can swap out the cheese or add proteins based on your preference.
