- 12 ounces (4 cups) Bow tie pasta, dry
- 2 cups Cherry tomatoes, halved
- 1/4 cup Red onion, diced
- 1 cup Bocconcini cheese, halved
- 1 cup Spinach, packed, finely chopped
- 1/2 cup Basil, finely chopped
- 3 tablespoons Pesto
- 2 tablespoons Olive oil
- 1/2 Lemon, juiced
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the bow tie pasta according to package instructions until al dente. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process.
- In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced red onion, halved bocconcini cheese, chopped spinach, and finely chopped basil.
- In a small bowl, whisk together the pesto, olive oil, lemon juice, salt, and black pepper to create the dressing.
- Pour the dressing over the pasta salad mixture and toss everything to ensure an even coat.
- Serve the salad chilled or at room temperature, garnished with extra basil if desired.
Notes
Chill before serving for the best flavor. You can substitute bocconcini cheese with feta for a tangier flavor.
