- 2 tablespoons Vegetable Oil
- 4 cups Bok Choy, chopped
- 1 Bell Pepper, sliced
- 2 cloves Garlic, minced
- 1 tablespoon Soy Sauce
- Salt and pepper to taste
- Optional toppings (sesame seeds, green onions) as desired
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add minced garlic and sauté for about 30 seconds until fragrant.
- Stir in chopped bok choy and sliced bell pepper, cooking for 3-4 minutes until tender-crisp. Add soy sauce, season with salt and pepper, toss, and serve. Top with sesame seeds or green onions if desired.
Notes
This stir fry is easily customizable. Substitute bok choy with kale or spinach, and add tofu or chickpeas for protein.
