Ingredients

  • 1 pound sliced beef sirloin
  • 4 cups chopped bok choy
  • 2 tablespoons vegetable oil
  • 3 cloves minced garlic
  • 1 tablespoon minced ginger
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Salt to taste
  • Pepper to taste
  • Cooked rice for serving
  • Cooked noodles for serving

Instructions

  1. Slice the beef sirloin thinly against the grain.
  2. Combine the sliced beef with soy sauce, salt, and pepper to marinate for about five minutes.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat until shimmering.
  4. Add the marinated beef to the skillet and stir-fry for about 3 to 4 minutes until browned.
  5. Remove the beef from the skillet and set aside.
  6. Sauté minced garlic and ginger in the same skillet for 30 seconds until fragrant.
  7. Toss the chopped bok choy into the skillet and stir-fry for another 3 to 4 minutes until tender yet crisp.
  8. Return the cooked beef to the skillet and mix in the remaining soy sauce and oyster sauce.
  9. Mix cornstarch with water to create a slurry, then pour it into the skillet and stir until the sauce thickens.
  10. Adjust seasoning as needed with salt and pepper and serve hot over rice or noodles.

Notes

Slicing beef against the grain ensures tenderness. Use high heat for the best results.
