A traditional Middle Eastern semolina cake infused with saffron and topped with crunchy pistachios, perfect for special occasions.

Ingredients

  • 1 cup Semolina
  • 1 cup Sugar
  • 1 cup Yogurt
  • 1/2 cup Melted butter
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Saffron threads
  • 1/2 cup Chopped pistachios
  • 1/2 cup Water
  • 1 tablespoon Rose water (optional)
  • Slivered pistachios for garnish (as desired)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine the semolina, sugar, yogurt, melted butter, baking powder, and saffron threads. Mix well until fully combined.
  3. Pour the mixture into the prepared baking dish and spread it evenly.
  4. Place the dish in the oven and bake for 30-35 minutes, or until the top is golden brown.
  5. While baking, prepare the syrup by combining water and sugar in a saucepan; bring to a boil and simmer for 10 minutes.
  6. Once baked, pour the warm syrup over the hot cake.
  7. Garnish with slivered pistachios before serving.

Notes

Use high-quality saffron for the best flavor. Allow the basbousa to absorb the syrup for several hours for optimal taste.
