  • 1/4 cup (50g) Packed light brown sugar
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 1 1/2 cups (190g) All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Ground cinnamon (optional)
  • 1/4 teaspoon Salt
  • 1/2 cup Chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease the loaf pan.
  2. Mash the ripe bananas thoroughly until mostly smooth.
  3. Stir in the melted butter until fully combined with the bananas.
  4. Add the granulated sugar, brown sugar, egg, and vanilla extract, mixing until well incorporated.
  5. Whisk together the flour, baking soda, salt, and ground cinnamon in another bowl.
  6. Fold the dry ingredients into the banana mixture, being careful not to overmix.
  7. Fold in the walnuts or chocolate chips if desired.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 50-60 minutes, or until a wooden skewer comes out clean.
  10. Let the bread cool in the pan for about 10 minutes before transferring to a wire rack.
