- 350 g Lotus Biscoff cookies
- 150 g unsalted butter (melted)
- 55 g unsalted butter (melted, for topping)
- 50 g all-purpose flour
- 50 g brown sugar (for topping)
- 20 g rolled oats
- 3 tart apples, peeled, cored, and sliced
- 50 g brown sugar (for apples)
- 1 teaspoon ground cinnamon
- 2 teaspoons cornstarch
- 690 g softened cream cheese
- 75 g granulated sugar
- 100 g Greek yogurt
- 2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon (for cheesecake)
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 3 large eggs
Instructions
- Prepare the crust by mixing the Biscoff cookies with melted butter and press into a springform pan. Bake at 350°F (175°C) for 10 minutes.
- Mix the topping ingredients until crumbly and set aside.
- Toss the apple slices with brown sugar, cinnamon, and cornstarch.
- Blend cream cheese with granulated sugar until smooth, then mix in yogurt, vanilla, and spices; gradually add eggs.
- Pour the cheesecake filling over the baked crust, add seasoned apples, and sprinkle with crumble topping.
- Bake at 325°F (160°C) for 60 minutes or until the center is set. Cool and refrigerate for at least 4 hours.
Notes
It’s best made a day in advance to allow flavors to meld. Serve warm with ice cream or caramel sauce.
